Cilantro lime rice with my turkey green chile enchiladas.
Cilantro lime rice
2 cups long grain rice
1 small onion, diced fine
2 green onions, diced fine
2 tsp minced canned garlic or 1 tsp fresh garlic clove minced
1/2 tsp ground cumin
2 heaping tsp Better then boulion Roasted chicken soup base(my tsps are bear sized, so probably 1 or 2 Tbsp for regular spoon.)
4 cups water or chicken broth,(do not use the chicken base if you use broth.)
1 Tbsp lime juice
zest of 1 lime
1 tbsp minced fresh cilantro leaves
Salt,(watch the salt with the base, unless you use low sodium everything then its okay.)
(becareful with pepper, since there is cumin added already.)
In a large sauce pan over medium high heat, cook and stir rice cumin, salt and pepper in some olive oil until slightly transparent, add rice and cilantro..Cook and stir until rice is lightly toasted being careful not to burn.
Add lime juice, zest and some salt, pepper to water with chicken base mixed in. Stir in to sauce pot..Bring to a boil for 5-8 minutes, stir a few times. Reduce heat cover and simmer until rice has absorbed all of liquid...Fluff with a fork and serve. Top with some minced fresh cilantro if desired.
This recipe is GF. My ingredients are all Gluten free in this recipe.
